I came up with this recipe after finding a Thai seasoning mix at WalMart, and it's become a family favorite. I just thought I'd share it. I hope you enjoy it, too. :)
Thai-Style Chicken Bake
6-8 boneless, skinless chicken breasts split sideways
1 cup regular couscous
1 cup coconut milk
1 small can mandarin oranges, drained
1/2 cup cashew halves
1 pack Spicy Thai Peanut Bake from A Taste of Thai (found in the oriental aisle at WalMart)
Cook the couscous according to directions, substituting coconut milk for the water. Pour into a bowl and stir in oranges and cashews. Generously stuff each breast with couscous mixture and tie closed with kitchen twine. Coat each breast in seasoning mix, place in a covered baking dish, and bake at 350F for 30-40 minutes.
